The Gluten

Gluten consists mainly of the gliadin and glutenin proteins and is present in the grains of multiple cereals, namely wheat, barley, rye and oat.

Over the last years there has been an increase of people who are intolerant to gluten, thus suffering from the celiac disease. This pathology causes damages in the digestive system and the small intestine, affecting the absorption of food nutrients. According to a study conducted by the CDC (Centre for Disease Control), the incidence of food allergies worldwide has increased by 50% between 1997 and 2013.

Bearing in mind those people who are intolerant or sensitive to this protein, our menu includes gluten free options. La Trattoria is accredited for more than 20 years by the Portuguese Celiac Association as a pioneer restaurant offering gluten free products.
